Key Ingredients

Vital wheat gluten

Serving and how to use

Vital wheat gluten adds structure, stretch and rise to low-carb breads and bakes.

In keto bread: [add amount from your recipe, e.g. "about Xg per loaf"]. One 700g pouch makes about [X] loaves.

To boost structure in other bakes: add [1 tablespoon] per [100g] of low-carb flour.

Also great for making seitan and meat-free dishes.

Contains gluten (wheat), so it isn't suitable for coeliacs or anyone avoiding gluten.

Usage, Baking Tips and Storage

Baking Role and Texture: Finally. Vital Wheat Gluten provides the elasticity, strength, and chew that low-carb flours naturally lack. It creates a stretchy dough matrix that traps yeast gas, allowing keto breads, rolls, and pizza bases to rise light and airy with an authentic bread-like texture.

How to Use: Do not use as a standalone flour. Mix 1 to 2 tablespoons per cup of low-carb flour (such as almond or coconut flour) to improve structural integrity, or follow specific keto yeast bread recipes. It is also the core ingredient used to make homemade seitan and plant-based protein meats.

Important Allergen Notice: While exceptionally low in carbohydrates and suitable for standard keto diets, this product consists of pure wheat protein. It is strictly unsuitable for individuals with celiac disease, wheat allergies, or gluten intolerances.

Storage and Handling: Store in a cool, dry place in an airtight container or keep the pouch tightly sealed away from ambient humidity to preserve freshness and protein quality. Keep out of reach of domestic pets.

Frequently Asked Questions

What is Vital Wheat Gluten and how is it used in low-carb baking?

Vital Wheat Gluten is the natural protein extracted from wheat grain, with nearly all the starch and carbohydrates removed. In low-carb baking, it replaces the structure lost when using gluten-free, low-carb flours like almond or coconut flour, giving keto breads, rolls, and pizza bases a realistic, chewy, and elastic texture that rises properly.

Is Vital Wheat Gluten keto-friendly given that it is derived from wheat?

Yes, for those who tolerate gluten. Keto is defined by low net carbohydrate intake, not strict grain avoidance. Because the starch is washed away during processing, Vital Wheat Gluten consists almost entirely of pure protein (around 75% to 80%) with very few net carbs per serving, making it a popular staple for crafting low-carb yeast breads.

Can I use Vital Wheat Gluten on its own as a direct substitute for regular flour?

No. Vital Wheat Gluten is an isolated protein, not a standalone flour. Using it on its own will result in a dense, rubbery texture. Instead, it should be blended with other low-carb ingredients, such as oat fibre, flaxseed meal, or nut flours, to create the ideal structural balance for your keto doughs and bakes.
