The Method
- The Creaming Phase: In a medium bowl, cream together the softened butter and the Finally. 100% Erythritol. Beat until light and fluffy. Since our sweetener does not caramelise, this aeration is what gives the shortbread its signature whipped lift.
- The Flavour Infusion: Mix in the vanilla extract and 1.5g of Ancient Spring Salt. The salt crystals dissolve beautifully into the fats, distributing that mineral goodness into every bite.
- The Fold: Gently fold in the de-fatted almond flour. Continue mixing until a soft, uniform dough forms. If your kitchen is very warm, chill the dough for 10 minutes to make it easier to handle.
- Shape and Press: Roll the dough into small balls (about 2.5 cm) and place them on a baking sheet lined with baking paper. Use a fork to press them down gently. This creates those classic shortbread ridges that hold onto the salt.
- Bake Low and Slow: Pop them into the oven at 150°C for 12 to 15 minutes.
- Finally. Tip: Do not wait for them to turn golden brown. Because our 100% Erythritol does not caramelise, these cookies will stay a beautiful pale cream colour. You will know they are done when the edges feel firm to the touch.
- The Finishing Touch: While the cookies are still warm and the butter is slightly active on the surface, sprinkle a tiny extra pinch of Ancient Spring Salt over the top. This creates a flavour bloom that hits your palate first.
