  • 60g Sugar-free dark chocolate

  • A pinch of Finally. Ancient Spring Salt (optional, for topping)


How to Make Them

  1. Mix the dry ingredients: In a large bowl, whisk together the HydroBeef, Collagen, ground almonds, powdered Golden Sweetener, and Ancient Spring Salt until there are no lumps left.

  2. Bring the dough together: Pour in the almond butter, melted butter, and vanilla extract. Stir it well. Add the almond milk one tablespoon at a time, using your hands to work it into a thick, pliable dough. It should feel just like real cookie dough. Once you're happy with the texture, fold in the chocolate chips.

  3. Press into the tin: Line a standard loaf tin with baking parchment. Pop the dough inside and press it down firmly into an even layer. (Tip: Use the bottom of a flat glass to get it really smooth and compacted so the bars don't crumble later.)

  4. The chocolate layer: Melt your sugar-free dark chocolate over a pan of simmering water or in short bursts in the microwave. Pour it evenly over the top of your cookie dough base. If you love a sweet-salty combo, scatter a tiny pinch of spring salt over the wet chocolate now.

  5. Chill and slice: Put the tin straight into the fridge for about 45 minutes to an hour until the chocolate has completely set. Use the parchment paper to lift the block out, place it on a chopping board, and slice it into 8 bars using a sharp knife.


Top Tips from the Kitchen

  • Keep them chilled: Because these bars are made with clean, whole ingredients and no artificial stabilisers, they are best kept in an airtight container in the fridge. They'll stay fresh for up to two weeks (if they last that long).

  • Want some crunch? If you miss the crunch of a commercial protein bar, you can fold a handful of sugar-free soy protein crisps or finely chopped pecans into the dough at the same time as the chocolate chips.
