Why This Unrefined Spring Salt is the Missing Piece in Your Keto Kitchen
Salt is one of the simplest ingredients in any kitchen, and one of the most important when you cook low-carb. Good salt brings out the natural flavour of meat, fish, eggs and vegetables, the foods at the heart of so many keto meals. That is why we are excited to share that Finally. Ancient Spring Salt now comes in three varieties: fine, coarse and black garlic.
What Makes Ancient Spring Salt Different?
Most salt comes from the ocean. Finally. Ancient Spring Salt is different. Rain falling on the hills around Rio Maior in Portugal filters deep underground through ancient rock salt deposits, before rising to the surface as a naturally salty spring.
The brine is gathered in traditional, spring-fed salt pans, where it is left to crystallise slowly in the sun and wind and then hand-harvested. It is a local salt-making tradition dating back to 1177, and the result is a natural, unrefined salt with nothing added.
Now in Three Varieties
Fine Spring Salt: an easy choice for everyday seasoning, mixing into dressings and adding to low-carb baking.
Coarse Spring Salt: a larger crystal for finishing dishes or seasoning during cooking.
Black Garlic Salt: our spring salt with a garlic twist. Add it to eggs, roasted vegetables, meat, fish and your favourite savoury dishes.

Why Your Body (and Your Taste Buds) Will Love It
1. Naturally Unrefined Unlike refined table salt, our Ancient Spring Salt is 100% natural, unrefined spring salt, with no anti-caking agents or additives. Just salt, the way it has been made in Rio Maior for centuries.
2. The Perfect Keto Companion If you're on a keto or low-carb journey, you may have heard of the "keto flu". Some people report headaches, tiredness and dizziness in the first week or two of cutting carbs (Bostock et al., Frontiers in Nutrition, 2020). Many low-carb eaters find they pay more attention to salt and fluids during this time, as sodium is one of the body's electrolytes. Season your meals well with a salt you enjoy, and if symptoms are severe or don't settle, speak to your GP.
3. Gourmet Texture Our coarse salt gives a satisfying crunch as a finishing salt. Sprinkle it over a perfectly seared steak, fresh avocado, or even a dark chocolate keto treat to elevate your home cooking to restaurant quality.
4. A Garlic Twist Our new Black Garlic Salt brings together two Finally. favourites. If you love our Finally. Black Garlic, this is the quickest way to add that savoury depth to everyday meals.
How to Use It
- For Cooking: Use the fine or coarse salt as you would any high-quality kosher or sea salt.
- For Baking and Dressings: Fine salt dissolves easily, so it's ideal for low-carb bakes and a simple vinaigrette.
- As a Finish: Keep a small bowl of coarse salt on your dining table to add a burst of flavour to your meals just before serving.
- For Savoury Favourites: Sprinkle Black Garlic Salt over scrambled eggs, roasted vegetables, steak or salmon.
- In Your Water: Some keto eaters like to add a tiny pinch of fine salt to water with a squeeze of lemon.
A little goes a long way. The NHS recommends adults have no more than 6g of salt a day, about a level teaspoon, including the salt already in our food (NHS). If you have high blood pressure, kidney problems or have been advised to watch your salt, please check with your GP before adding more.

FAQ
What is the difference between fine and coarse salt? It's the size of the crystal. Fine salt dissolves quickly, so it suits everyday seasoning, dressings and baking. Coarse salt has larger crystals for finishing dishes or seasoning during cooking.
Where does Finally. Ancient Spring Salt come from? Rio Maior in Portugal. Spring water rises through ancient rock salt deposits, and the brine crystallises slowly in traditional salt pans before it is hand-harvested.
Is salt keto friendly? Yes. Salt contains no carbohydrate. Many people on a low-carb diet pay more attention to salt in the early weeks, but the NHS recommends adults have no more than 6g a day, so check with your GP if you've been advised to limit salt.
What can I use black garlic salt on? Scrambled eggs, roasted vegetables, steak, salmon and any savoury dish that needs a garlic twist.
