The Ingredients

To achieve that signature Easter spice and a moist, light crumb, you will need:

  • 2 Large Eggs

  • 35g Finally. Soft Brown or Dark Brown Sugar Alternative: essential for those deep, caramel notes

  • 5g Finally. FOS Prebiotic Fibre: a simple way to add prebiotic fibre to your holiday baking

  • 65g Butter, melted

  • 100g Almond Flour

  • 2 tbsp Self-raising Flour

  • 1/2 tsp Mixed Spice and 1/4 tsp Salt

  • 1 tsp Bicarbonate of Soda

  • 2g (1/3 tsp) Apple Extract: optional, but it adds a wonderful fruity depth

The Method

  1. Preheat: Set your oven to 180°C and line a muffin tin with your favourite festive cases.

  2. Whisk: Beat the eggs together with your Finally. Sugar Alternative, FOS, and the apple extract. Once combined, stir in the melted butter.

  3. Combine: Fold in your chosen Texture Base (courgette, carrot, or banana) from the options above.

  4. Dry Ingredients: Gently fold in the flours, spices, salt, and bicarbonate of soda. Mix until just combined to keep the muffins light and airy.

  5. Bake: Fill the cases and bake for 18 to 22 minutes. Allow to cool before the final flourish.
