Whether you’re fuelling up for a busy Tuesday or hosting a slow Sunday brunch, this 5-ingredient wonder is about to become your new kitchen staple. It's the perfect way to satisfy that sweet tooth without the sugar crash!


What You’ll Need

This recipe keeps it simple with clean, keto-approved ingredients. The secret to that "melt-in-your-mouth" texture? It's all in the whipped egg whites.

  • Cottage cheese or ricotta: 500g (Ricotta gives a smoother finish; cottage cheese adds extra protein)

  • Eggs: 4 (separated into yolks and whites)

  • Finally. Golden Sugar Alternative: 4 tbsp

  • Fresh strawberries: 200g (halved)

  • Powdered sugar substitute: For dusting (optional)

For this recipe, we’ve used Finally. Golden. Unlike standard sweeteners, it captures that warm, rich flavour and golden hue of traditional sugar but with:

  • Natural Ingredients: A plant-based blend of Erythritol, Stevia, and a touch of apple extract for a perfect caramel-like finish without the bitter aftertaste.


Method

1. Prep the Base

Preheat your oven to 180°C. Give your baking dish a quick coating of olive oil to ensure nothing sticks. In a large mixing bowl, combine your cheese, the egg yolks, and the Finally Golden sweetener. Mix until it’s silky and creamy.

2. The Secret to the Lift

In a separate, clean bowl, whisk your egg whites until they form stiff peaks. This is what gives the bake its soufflé-like height! Gently—and we mean gently—fold the whites into your cheese mixture. You want to keep as much air in there as possible, so don't stir too vigorously.

3. Bake to Perfection

Pour the mixture into your prepared dish and scatter those juicy strawberry halves across the top. Pop it into the oven for 40–50 minutes. You’re looking for a beautiful golden hue and a firm, set centre.

4. The Finishing Touch

Leave it to cool slightly (it will settle a little as it cools, which is perfectly normal). If you're feeling fancy, give it a light dusting of powdered sugar substitute before serving.


Top Tip:

Try swapping strawberries for blueberries or raspberries if you want to mix up your antioxidants. This bake is also delicious served cold the next day if there's any left!
