Date & Coffee Doughnuts (@SpamellaB’s)
We are absolutely thrilled to share a guest recipe from the kitchen of the amazing @spamellab! If you follow her, you know she is the queen of creating treats that feel like a total indulgence while staying mindful of wholesome ingredients.
Today, she’s bringing us a recipe that hits all the right notes: the deep, caramel richness of dates paired with the bold kick of espresso. These Date & Coffee Doughnuts are gluten-free, naturally sweetened, and topped with a creamy glaze that you’ll want to eat by the spoonful.

The Ingredient Breakdown
For the Doughnuts:

1 Ripe banana (the spottier, the better!)

2 tbsp Nut butter (almond or cashew works beautifully)

100ml Oat milk

1 tbsp Instant coffee (dissolved in 1 tbsp boiling water)

100g Gluten-free flour
-
1 tsp Cinnamon
-
1 tsp Baking powder
-
70g Dates, finely chopped
For the Topping:

3 tbsp Thick coconut or Greek yoghurt

1 tbsp Coconut oil
-
1 tbsp Smooth nut butter
-
1 tbsp Finally Soft Brown Keto Sugar

Pinch of cinnamon
-
Granola (for that essential crunch!)

Step-by-Step Instructions
1. Prep the Batter
Preheat your oven to 180°C. Place all the doughnut ingredients—except the chopped dates—into a food processor or blender. Whizz the mixture until it’s thick, creamy, and smooth. Once blended, gently fold in those chopped dates by hand to ensure every bite has a bit of "caramel" texture.
2. Fill and Bake
Spoon the mixture into a 6-hole silicone doughnut mould. Make sure to fill each one right to the top and spread the batter out well. Bake for 15–20 minutes until they have risen, are golden, and feel firm to the touch.
Pro Tip: Leave them to cool completely in the mould before popping them out onto a wire rack. This helps them keep that perfect doughnut shape!
3. The Finishing Touch
While the doughnuts cool, melt your coconut oil and nut butter together, then allow them to cool slightly. Stir in the yoghurt, keto sugar, and cinnamon until you have a smooth, glossy glaze.
Generously spoon the icing over each doughnut, sprinkle with a handful of your favourite granola for texture, and allow them to set.
