Black Garlic and Herb Keto Sausage Rolls
Is it even a party without sausage rolls? Usually they're the first thing a low-carber has to walk past at the buffet. Not this year. These have a soft, golden pastry and a juicy pork filling, with a deep, savoury twist from Finally. Black Garlic.
They're easy to make ahead and freeze, so you can bake a batch now and have them ready for every December get-together.

Why Black Garlic Works So Well
Black garlic is slow-aged until the cloves turn soft and fudgy, with a mellow, sweet and savoury flavour. Mashed into the filling, it melts into the pork and adds a rich depth that ordinary garlic can't match, without any harsh bite.
The pastry uses almond flour with a little Finally. Vital Wheat Gluten, which adds stretch and structure so the dough rolls and folds without cracking.

Makes: 12 sausage rolls | Prep: 25 minutes | Chill: 15 minutes | Cook: 25 minutes
Ingredients
For the Pastry
- 170g grated mozzarella
- 30g full-fat cream cheese
- 70g fine blanched almond flour
- 15g Finally. Vital Wheat Gluten
- 1 medium egg
For the Filling
- 400g pork mince (about 20% fat)
- 3 to 4 cloves Finally. Black Garlic, mashed
- 1 tsp dried sage
- ½ tsp dried thyme
- 1 tbsp fresh parsley, finely chopped
- ½ tsp Finally. Ancient Spring Salt
- ¼ tsp black pepper
To Finish
- 1 egg, beaten
- 1 tsp sesame seeds (optional)
Method
1. Make the Filling
Put the pork mince, mashed black garlic, sage, thyme, parsley, Ancient Spring Salt and pepper in a bowl. Mix well with your hands until the black garlic is evenly spread through. Chill while you make the pastry.
2. Melt the Cheese
Put the mozzarella and cream cheese in a microwave-safe bowl. Heat for 1 minute, stir, then heat for another 30 seconds until fully melted and smooth.
3. Make the Pastry
Add the almond flour, Vital Wheat Gluten and egg to the melted cheese. Stir quickly, then knead with your hands until a smooth dough forms. If the cheese starts to set before it's mixed in, warm the bowl for 10 seconds. Wrap and chill for 15 minutes.
4. Roll Out
Heat the oven to 200°C (180°C fan) and line a baking tray with parchment. Roll the dough between two sheets of baking parchment into a rectangle about 30cm by 24cm. Cut it in half lengthways to make two long strips.
5. Fill and Fold
Divide the filling in half and shape each half into a long sausage. Lay one along the centre of each pastry strip. Brush one edge with beaten egg, fold the pastry over and press to seal. Turn the rolls so the seam is underneath.
6. Cut and Bake
Cut each long roll into 6 pieces and place them on the tray. Brush with beaten egg, score the tops, and sprinkle with sesame seeds if you like. Bake for 22 to 25 minutes, until the pastry is deep golden and the filling is cooked through with no pink meat.
Recipe Tips
- Keep the dough cool. If it gets sticky while rolling, pop it back in the fridge for 5 minutes.
- Use the parchment to help lift and fold the pastry over the filling.
- Check the filling is cooked through, with no pink meat and juices running clear.
- To freeze, open-freeze the unbaked rolls on a tray, then pack into a bag. Bake from frozen at the same temperature for an extra 10 to 15 minutes, until piping hot all the way through.
- Store baked rolls in the fridge in an airtight container for up to 2 days.
- Prefer sausage meat? Check the label, as many contain rusk or breadcrumbs.
- Vital Wheat Gluten contains gluten, and the pastry contains milk, egg and nuts.

FAQ
Can you make sausage rolls on keto? Yes. A pastry made from mozzarella, cream cheese, almond flour and a little vital wheat gluten gives a soft, golden low-carb dough that wraps around the filling like traditional pastry.
Can I freeze keto sausage rolls? Yes. Freeze them unbaked on a tray, then bag them up. Bake from frozen for an extra 10 to 15 minutes, until piping hot all the way through.
Can I make these gluten-free? Leave out the vital wheat gluten and add an extra 15g of almond flour. The pastry will be a little more delicate, so chill it well and use the parchment to help fold it.
What does black garlic taste like? Sweet, mellow and savoury, a little like molasses and balsamic, without the sharp bite of raw garlic.
