We have all had those evenings. You have hit your macros, stayed away from the office biscuit tin, but that late-night sweet craving is hitting hard. Usually, a protein snack means a chalky bar or a watery shake.

Not today.

Using our Finally. Soft Brown Sugar Alternative and Finally. HydroBeef Protein, we have created a silky, decadent salted caramel mousse. It is light, airy, and packed with 25g of pure bovine protein to support muscle recovery and satiety, all with a 0 Glycemic Index.

The Finally. Pantry Essentials:


Fresh Ingredients:

  • 200ml Cold Heavy Cream (Double cream)

  • 1/2 tsp Sea Salt (Maldon flakes work best)

  • 1/2 tsp Vanilla Extract


Instructions:

1. The Caramel Cream: In a chilled bowl, pour in your double cream. Add the Finally. Soft Brown sweetener and vanilla. Whisk by hand or with an electric whisk until it just starts to thicken.

2. The Hydro-Boost: Sift in your Finally. HydroBeef Protein and the FOS Prebiotic Fibre. The HydroBeef is incredibly fine and will dissolve into the cream, acting as a natural thickener and creating a gorgeous caramel colour.

3. Whip to Perfection: Continue whisking until you reach stiff peaks. You want it thick enough to hold its shape in the ramekin.

4. Salt it Up: Fold in the sea salt gently. The contrast between the deep brown sugar flavour and the salt is what makes this truly special.

5. Chill and Serve: Spoon into two glass ramekins and chill for at least 30 minutes. This allows the fibre and protein to set into a firm, velvety texture. Top with a few extra salt flakes before serving.
